Deliciously Simple 5 Ingredient Souper Rice Recipe

  • 4 cups broth (chicken or vegetable)
  • 1 cup mixed vegetables (frozen peas and carrots)
  • 1 onion (chopped finely)

Instructions

  1. Chop the onion finely.
  2. Sauté the onion in a large pot over medium heat with a splash of oil for 3-4 minutes until translucent.
  3. Pour in the broth and bring it to a simmer.
  4. Add the rice and stir to combine.
  5. Toss in the mixed vegetables, seasoning with salt and pepper, and let simmer.
