Deliciously Irresistible White Chocolate Cranberry Pistachio Cookies

  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda

  • ¾ cup white chocolate chips
  • ½ cup dried cranberries
  • ½ cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy (about 3-5 minutes).
  3. Beat in the egg and vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the white chocolate chips, dried cranberries, and chopped pistachios.
  7. Drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden and the centers look soft.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes
