Deliciously Easy Mocha Chocolate Crinkle Cookies

  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tablespoon brewed coffee or espresso
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and brewed coffee until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Cover the bowl with plastic wrap and chill the dough in the refrigerator for about 30 minutes.
  7. Scoop out dough balls and roll them in powdered sugar until well coated.
  8. Place them on a lined baking sheet about two inches apart and bake for 10-12 minutes until the edges are set and the tops are cracked.

Notes

For a more intense chocolate flavor, add chocolate chips or use almond flour for a nutty twist.
