A delightful blend of seasoned meat, gooey cheese, and fresh vegetables, all layered in a warm tortilla for a comforting weeknight meal.

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 6 large tortillas
  • 1 can refried beans
  • 2 cups shredded cheese (cheddar, Monterey Jack)
  • 12 cups chopped veggies (e.g., bell peppers, onions)
  • Sour cream (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with non-stick cooking spray.
  2. In a large skillet over medium heat, brown the ground meat for about 5-7 minutes.
  3. Drain excess fat and stir in the taco seasoning with 1/4 cup of water, simmering for an additional 3 minutes.
  4. Layer in the prepared baking dish: tortillas, refried beans, seasoned meat, shredded cheese, and chopped veggies. Repeat layers, finishing with cheese on top.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is bubbling and golden brown.
  6. Let cool for 5-10 minutes, then slice and serve with toppings like sour cream or fresh salsa.
