Crockpot Cream Cheese Chicken Chili

A warm and comforting chili made with tender chicken, creamy cheese, and a medley of spices.

  • 2 chicken breasts
  • 8 oz cream cheese
  • 1 can black beans (drained)
  • 1 cup corn (drained)
  • 1 can diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp garlic powder
  • 1 onion (chopped)
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the bottom of the crockpot and season with salt, pepper, and garlic powder.
  2. Layer in the diced tomatoes, black beans, and corn over the chicken.
  3. Sprinkle chili powder and additional garlic powder over the ingredients.
  4. Cube the cream cheese and place it on top of the mixture.
  5. Cover and set the slow cooker to low for 6–8 hours or high for 4 hours.
  6. After cooking, shred the chicken in the pot and stir everything until combined.
  7. Serve in bowls and garnish with toppings of your choice.

Notes

This chili is highly adaptable; feel free to swap chicken for turkey or use dairy-free cream cheese as needed.
