Creamy Vegetable Rice Casserole with Cheddar and Ritz Crackers

  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 1 cup fresh or frozen mixed vegetables (e.g., broccoli, carrots, peas)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup milk or non-dairy alternative
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup Ritz crackers, crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, combine rice and vegetable broth. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until cooked.
  3. In a large mixing bowl, combine cooked rice, mixed vegetables, cream of mushroom soup, cheddar cheese, milk, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  4. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  5. In a separate bowl, crush Ritz crackers and mix with melted butter if desired. Sprinkle over the casserole.
  6. Bake for 25-30 minutes until bubbly and golden brown on top.
  7. Let sit for a few minutes before serving.
