Creamy Rotisserie Chicken Broccoli Pasta

A comforting weeknight dinner featuring pasta, creamy sauce, rotisserie chicken, and vibrant broccoli.

  • 8 ounces pasta of your choice
  • 2 cups rotisserie chicken, shredded
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large pan over medium heat, add the olive oil. Toss in the broccoli florets and sauté for about 3-4 minutes until bright green and tender-crisp.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Pour in the heavy cream, stirring to combine, and allow to simmer for about 2-3 minutes until slightly thickened.
  5. Add the shredded chicken and Parmesan cheese, stirring until melted and blended. Adjust the consistency with reserved pasta water as needed.
  6. Gently fold in the cooked pasta, ensuring it’s well-coated. Season with salt and pepper to taste.
  7. Serve in bowls, garnished with additional Parmesan or fresh herbs if desired.

Notes

For a lighter version, try half-and-half or a dairy-free alternative. Optionally, add red pepper flakes for a kick!
