Cozy Up with Eggnog Poke Cake

A delightful poke cake infused with the rich flavors of eggnog and topped with a creamy layer, perfect for holiday gatherings.

Ingredients

Scale
  • 1 box white cake mix
  • 3 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon nutmeg
  • 1 cup eggnog
  • 1 cup whipped topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cake mix, eggs, buttermilk, vanilla extract, and nutmeg. Mix until smooth and creamy, about 2-3 minutes.
  3. Pour the batter into a greased 9×13-inch baking pan and bake for 30-35 minutes until a toothpick inserted comes out clean.
  4. Let the cake cool for about 10 minutes, then use the handle of a wooden spoon to poke holes about 1 inch apart throughout the cake.
  5. In a separate bowl, combine eggnog and a pinch of nutmeg. Slowly pour this mixture over the warm cake, allowing it to soak into the holes.
  6. Once cooled completely, top with whipped topping and spread evenly.
  7. Refrigerate for at least 2 hours or overnight before serving.

Notes

For added flavor, consider mixing spices like cinnamon or ginger into the batter. You can substitute eggnog with non-dairy alternatives if needed.
