Cozy Beef Tips with Mushroom Gravy

  • 1 pound beef tips, cubed
  • 8 ounces mushrooms, fresh
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Salt and pepper, to taste

Instructions

  1. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the beef tips, seasoning them with salt and pepper. Sear for about 5-7 minutes until browned on all sides.
  2. Remove the beef and set it aside. In the same skillet, add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onions are translucent.
  3. Add the mushrooms and stir for an additional 5 minutes until they are browned.
  4. Pour in the beef broth and soy sauce, scraping any brown bits off the bottom of the pan. Bring the mixture to a simmer and let it cook for 5-10 minutes.
  5. Mix the cornstarch with a bit of cold water to create a slurry. Slowly add this to the simmering gravy, stirring for about 2 minutes until thickened.
  6. Return the seared beef tips to the gravy, cover, and simmer for an additional 15-20 minutes.
  7. Serve hot over egg noodles, rice, or mashed potatoes.

Feel free to add carrots or peas for a burst of color, or adjust the seasonings to your preference.
