  • 2 large eggs
  • 2 teaspoons vanilla extract

  • 1 teaspoon salt
  • 3 cups rolled oats
  • 1 cup chocolate chips
  • 1 cup mixed nuts or coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Add the eggs one at a time and mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt, then gradually add to the wet ingredients.
  5. Fold in the oats and any mix-ins like chocolate chips or nuts.
  6. Scoop rounded tablespoons of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes until golden around the edges and slightly soft in the center.
  8. Cool on the baking sheet for 5 minutes before transferring to wire racks.

Notes

Store cookies in an airtight container for up to 5 days or refrigerate for up to a week. Reheat in the oven at 350°F for 5 minutes for freshness.
