Cinnamon Roll Cake

A soft, moist cake swirled with a rich cinnamon mixture, capturing the flavor of traditional cinnamon rolls without the fuss.

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon (for the batter)
  • ½ cup brown sugar (for the filling)
  • 1 tbsp ground cinnamon (for filling)
  • ½ cup powdered sugar (optional, for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a bowl, mix the flour, baking powder, salt, and 1 teaspoon of ground cinnamon. Set aside.
  3. In a mixing bowl, beat together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, followed by the vanilla extract. Mix until combined.
  5. Gradually add the dry mixture into the wet ingredients until just combined, ensuring not to over-mix.
  6. In a separate bowl, combine the brown sugar and remaining tablespoon of cinnamon.
  7. Layer half of the batter into the prepared baking dish, then sprinkle the cinnamon-sugar mixture, and top with the remaining batter.
  8. Bake for 25–30 minutes or until golden and a toothpick inserted comes out clean.

Notes

For a creamier finish, drizzle with a glaze made from powdered sugar and milk after cooling.
