Cinnamon French Toast Roll Ups

A delightful twist on classic French toast, these Cinnamon French Toast Roll Ups are filled with sweet cream cheese, dusted in cinnamon, and perfect for any breakfast or snack occasion.

  • 8 slices soft white or whole grain bread
  • 4 oz cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons butter

Instructions

  1. Flatten the bread slices using a rolling pin until about 1/4 inch thick.
  2. In a bowl, mix together softened cream cheese and sugar until creamy.
  3. Spread a thin layer of the cream cheese mixture on one side of each slice of flattened bread and roll them up tightly.
  4. In another bowl, whisk together eggs, milk, and a dash of vanilla extract.
  5. Heat a large pan over medium heat and melt butter. Dip each roll up in the egg mixture and cook in the pan seam side down until golden brown on all sides, about 2-3 minutes per side.
  6. Roll the cooked roll ups in a mixture of sugar and cinnamon while warm.
  7. Serve warm with maple syrup or whipped cream.

Notes

For a fun twist, consider adding mashed bananas to the filling or using flavored bread like cinnamon raisin. These roll ups can also be made ahead of time and cooked fresh in the morning.
