Chocolate Peanut Butter Energy Bites

  • 1/2 cup peanut butter
  • 1/3 cup honey or maple syrup
  • 1/2 cup chocolate chips
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine the oats and a pinch of salt.
  2. Add the peanut butter and honey into the oats and mix well.
  3. Using a spatula or clean hands, mix until evenly combined.
  4. Gently fold in the chocolate chips and vanilla extract.
  5. Using a tablespoon or cookie scoop, portion out the mixture and roll into small balls.
  6. Place the rolled balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes.
  7. Once set, enjoy fresh or store for later.

Store in an airtight container in the fridge for up to a week or freeze for up to three months.
