  • 3 large eggs, room temperature
  • ½ cup (120 g) sour cream, room temperature
  • 1 teaspoon almond extract
  • 1 (21 oz) can cherry pie filling
  • 1 cup mini chocolate chips (optional)
  • 3 oz chocolate chips (for icing)
  • 3 tablespoons unsalted butter (for icing)
  • 2 cups (180 – 240 g) powdered sugar (for icing)
  • 1 teaspoon vanilla extract (for icing)
  • 34 tablespoons (45 – 60 ml) warm milk (for icing)

Instructions

  1. Preheat your oven to 350°F (177°C) and grease a 9 x 13 inch cake pan with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the eggs, sour cream, almond extract, and chocolate cake mix until everything is well combined and smooth.
  3. Gently fold in the cherry pie filling and mini chocolate chips, if using.
  4. Pour the batter into the prepared pan and bake for 30 to 35 minutes, until a toothpick inserted comes out with a few moist crumbs.
  5. Allow the cake to cool in the pan for 1 hour before transferring it to a serving platter.
  6. To prepare the icing, melt the chocolate chips and butter together, then mix in the powdered sugar, vanilla extract, and warm milk until you achieve the desired consistency.
  7. Spread the icing over the cooled cake, slice, and serve. Enjoy every decadent bite!
