Chickpea Feta Avocado Salad

A refreshing and nutritious salad blending chickpeas, avocados, and feta cheese, dressed with lemon juice and herbs.

  • 1 can of chickpeas (drained and rinsed)
  • 1 ripe avocado (diced)
  • ½ cup feta cheese (crumbled or cubed)
  • 1 cup cherry tomatoes (halved)
  • ½ cucumber (diced)
  • ¼ red onion (finely chopped)
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • Fresh herbs (like parsley or cilantro) – optional

Instructions

  1. Prepare Your Ingredients: Start by draining and rinsing the chickpeas under cold running water.
  2. Chop the Vegetables: Dice the avocado, cucumber, and finely chop the red onion. Halve the cherry tomatoes.
  3. Combine in a Bowl: In a large mixing bowl, combine the chickpeas, diced avocado, chopped cucumber, cherry tomatoes, and red onion.
  4. Add the Cheese and Dressing: Crumble the feta cheese over the salad and whisk together the lemon juice, olive oil, salt, and pepper in a separate bowl.
  5. Season and Toss: Pour the dressing over the salad and gently toss everything together.
  6. Garnish with Herbs: If desired, add freshly chopped herbs.
  7. Taste and Adjust: Sample the salad and adjust seasoning as needed.

Notes
