Chicken Shawarma with Garlic Sauce

A flavorful Middle Eastern classic featuring tender, spiced chicken wrapped in pita, drizzled with creamy garlic sauce.

  • 1 lb chicken thighs
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp coriander
  • Salt and pepper to taste
  • 2 tbsp lemon juice
  • Pita bread for serving
  • Fresh vegetables for topping (lettuce, tomatoes, cucumbers, pickles)

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine olive oil, minced garlic, cumin, paprika, turmeric, coriander, salt, and pepper. Whisk until well blended.
  2. Marinate the Chicken: Add the chicken thighs to the marinade, ensuring each piece is well coated. Cover and let it marinate in the fridge for at least 30 minutes.
  3. Cook the Chicken: Preheat your air fryer or grill pan to medium-high heat. Cook the chicken thighs for 20-25 minutes, flipping halfway through.
  4. Make the Garlic Sauce: While chicken is cooking, whisk together additional minced garlic, lemon juice, and olive oil until smooth and creamy. Season with salt to taste.
  5. Slice and Serve: Once the chicken is done, let it rest for 5 minutes, then thinly slice it. Arrange on a platter with pita, garnishes, and garlic sauce.
  6. Add Toppings: Load up your pita with fresh veggies and enjoy.

Notes

Marinate chicken overnight for enhanced flavor. Store leftovers in airtight containers for up to 4 days.
