Chicken Bites In Garlic Butter

Tender chicken pieces seared in garlic butter and lemon sauce, perfect for quick dinners and meal prep.

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Prepare the chicken. Cut the chicken breasts into 1-inch bite-sized pieces and pat them very dry with paper towels.
  2. Season. In a mixing bowl, combine the chicken with salt, black pepper, paprika, and garlic powder. Toss until evenly coated.
  3. Dust with flour. Sprinkle the flour over the seasoned chicken and toss again to coat.
  4. Heat the pan. Warm a skillet over medium-high heat and add the olive oil and 1 tablespoon of butter.
  5. Sear the chicken. Add the chicken in an even layer to the skillet and sear for 2 to 3 minutes without moving.
  6. Flip and finish searing. Flip the pieces and continue cooking for another 3 to 4 minutes until golden brown and cooked through.
  7. Remove and rest. Transfer the chicken to a plate and rest.
  8. Make the garlic butter sauce. In the same skillet, reduce heat to medium, melt the remaining butter, and add the minced garlic.
  9. Add flavor. Stir in the crushed red pepper flakes and the fresh lemon juice.
  10. Combine and simmer. Return the chicken to the skillet and toss to coat in the sauce.
  11. Finish and serve. Stir in the chopped parsley and sprinkle with grated Parmesan if desired.

Notes

Pat chicken dry for better browning. Store leftovers in an airtight container for up to 3 days.
