Chicken Avocado Melt Sandwich

A quick and delicious sandwich featuring creamy avocado, tender chicken, and gooey cheese, perfect for weeknight dinners or casual gatherings.

  • 2 slices of bread
  • 1 cup cooked chicken, shredded or diced
  • 1 ripe avocado
  • ½ cup shredded cheese (cheddar, mozzarella, or preferred)
  • 1 tablespoon mayonnaise
  • Salt and pepper to taste
  • Optional: sliced tomatoes and lettuce

Instructions

  1. Begin by shredding or dicing the cooked chicken and placing it in a medium bowl. Scoop the flesh of the avocado into the bowl, add mayonnaise, salt, and pepper, and mash everything together.
  2. Stir in half of the shredded cheese into the chicken and avocado mixture.
  3. On a cutting board, place one slice of bread and spoon a generous amount of the chicken and avocado mixture onto it. Top with sliced tomatoes or lettuce if desired.
  4. Sprinkle the remaining cheese over the filling, then place the second slice of bread on top.
  5. In a heated skillet with a little butter or oil, toast the sandwich for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes until the cheese is melted.
  6. Remove the sandwich, let it rest for a minute, then slice in half and serve warm.

Notes

You can use a panini press or an air fryer for a crispy finish. Customize ingredients based on preference.
