  • 2 large eggs

  • 2 1/2 cups old-fashioned oats
  • 1 cup chopped pecans
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Position racks in the center of the oven for even baking.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth for 2 to 3 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, salt, and cinnamon in a separate bowl.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in the oats and chopped pecans until evenly distributed.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets, spaced about 2 inches apart.
  8. Bake for 10 to 12 minutes or until the edges are golden brown.
  9. Let cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

For crisper cookies, use an ungreased baking sheet. Store in an airtight container for up to 4 days, with a slice of bread to maintain chewiness.
