Chewy Christmas Cranberry Orange Cookies

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • Zest of 1 large orange

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy—about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually incorporate this mixture into the wet ingredients until just combined.
  5. Gently fold in the dried cranberries and orange zest.
  6. Using a cookie scoop or tablespoon, drop rounded dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  7. Bake for 10–12 minutes, until the edges are golden and the centers appear slightly soft. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Store cookies in an airtight container at room temperature for up to a week. Freeze for longer storage and reheat in the oven for optimal texture.
