Cheesy Ranch Potatoes and Smoked Sausage

  • 34 medium potatoes (Yukon Gold or red)
  • 1416 oz smoked sausage
  • 2 cups shredded cheese (Cheddar or cheese blend)
  • 1 packet ranch seasoning
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a large baking dish with olive oil.
  2. Wash and cut the potatoes into bite-sized pieces.
  3. Slice the smoked sausage into bite-sized pieces.
  4. In a large bowl, combine potatoes, sausage, ranch seasoning, and olive oil, tossing until well coated.
  5. Pour the mixture into the greased baking dish, spreading evenly.
  6. Cover with aluminum foil and bake for 30 minutes to steam the potatoes.
  7. Remove the foil, sprinkle cheese on top, and bake for an additional 15-20 minutes until cheese is melted and bubbly.
