Cheesy Hashbrown Dorito Casserole

A cozy, crowd-pleasing bake that combines savory ground beef with creamy cheese soup and tangy Rotel for a comforting, slightly spicy flavor.

  • 1 lb ground beef
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 lb frozen hashbrowns
  • 1 can Rotel (diced tomatoes with green chilies)
  • 1 can cheddar cheese soup
  • 1/2 cup sour cream
  • 1 packet taco seasoning

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook the ground beef until browned in a skillet over medium heat, breaking it apart as it cooks.
  3. Drain excess fat from the skillet.
  4. Stir in the onion powder, garlic powder, cumin, and salt and pepper; cook for another minute.
  5. Mix together the seasoned beef, hashbrowns, Rotel, cheddar cheese soup, sour cream, and taco seasoning in a large bowl.
  6. Spread the mixture evenly in the prepared baking dish.
  7. Bake for 30 to 35 minutes until heated through and the top is slightly golden.
  8. Let cool for about 5 minutes before serving.

Notes

Allow the casserole to rest for 5 minutes after baking for easier slicing. Refrigerate leftovers in an airtight container for 3 to 4 days.
