Cheesy Ground Beef Enchiladas

Delicious and comforting Cheesy Ground Beef Enchiladas filled with seasoned beef and topped with gooey cheese.

  • 1 pound ground beef
  • 1 cup onion, chopped
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is translucent, about 8-10 minutes. Stir in cumin, chili powder, salt, and pepper, and let it simmer for another 2 minutes.
  3. Warm the corn tortillas over low heat for about 1-2 minutes per side until pliable.
  4. Spoon about 2 tablespoons of the beef mixture into each tortilla, sprinkle with cheese, roll them up tightly, and place seam-side down in a baking dish.
  5. Pour the enchilada sauce evenly over the top and sprinkle any remaining cheese.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly.
  7. Garnish with fresh cilantro and serve with toppings like sour cream or avocado.

Notes

These enchiladas can be made ahead of time and stored in the fridge. They keep well and can also be frozen for up to three months.
