Cheesy Chicken Broccoli Rice Casserole

A comforting and rich casserole with chicken, broccoli, and melted Colby Jack cheese, perfect for family dinners.

  • 2 boneless, skinless chicken breasts, cooked and cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon seasoned salt
  • Salt and black pepper, to taste
  • 2 cans (10.5 oz each) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup heavy whipping cream
  • 3 cups shredded Colby Jack cheese, divided

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat and cook the seasoned chicken until golden brown.
  3. Combine both cans of cream of chicken soup, cream of mushroom soup, heavy whipping cream, and 2 cups of Colby Jack cheese in a bowl.
  4. Fold the cooked chicken pieces into the mixture until well coated.
  5. Pour the mixture into a baking dish and sprinkle the remaining cheese on top.
  6. Bake for 25 to 30 minutes or until the cheese is bubbly and golden.
  7. Let the casserole cool slightly before serving.

Notes
