Carrot Oatmeal Cookies with Cream Cheese Frosting

  • 2 cups powdered sugar, sifted if lumpy (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together 1 cup softened unsalted butter, 1 cup packed brown sugar, and 1/2 cup granulated sugar until light and fluffy.
  3. Beat in 2 large eggs one at a time, mixing well after each addition, then stir in 1 teaspoon vanilla extract.
  4. Whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, and 1/2 teaspoon ground ginger in another bowl.
  5. Add the dry ingredients to the wet mixture and mix until just combined.
  6. Fold in 2 cups finely grated carrots, 1 cup old-fashioned rolled oats, and any optional add-ins like 1 cup chopped walnuts or 1/2 cup raisins.
  7. Drop dough balls onto prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 12 to 15 minutes, or until the edges are golden brown.
  9. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  10. Beat together 8 oz softened cream cheese and 1/4 cup softened unsalted butter until smooth, then add 2 cups powdered sugar and 1 teaspoon vanilla extract, beating until fluffy.
  11. Frost the cooled cookies generously.

Notes

Chill the dough for thicker cookies. Store in an airtight container in the refrigerator for up to 5 days.
