Cardamom Shortbread Cookies with Orange Glaze

  • 1 cup unsalted butter (softened)
  • ½ cup powdered sugar
  • 2 cups all-purpose flour
  • 1 teaspoon ground cardamom
  • Zest of 1 orange
  • ¼ teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons freshly squeezed orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy, about 3-4 minutes.
  3. Gradually sift in the flour, ground cardamom, and salt. Mix until just combined.
  4. Gently fold in the orange zest.
  5. Dust a clean surface with flour. Roll out the dough to about ¼-inch thickness and cut into shapes.
  6. Transfer cookies to a parchment-lined baking sheet and bake for 20-25 minutes until edges are lightly golden.
  7. While cookies cool, whisk together powdered sugar with orange juice until smooth. Drizzle the glaze over the cookies and allow to set.

Notes

Store cookies in an airtight container at room temperature for about a week. For longer storage, refrigerate for up to two weeks.
