Cannoli Cookies

Delightfully sweet cookies that blend the rich flavors of traditional Italian cannoli with a simple cookie format.

  • 1 cup ricotta cheese
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ricotta cheese, granulated sugar, egg, vanilla extract, and cinnamon. Mix until smooth and creamy.
  3. In a separate bowl, whisk together the all-purpose flour and baking powder.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the mini chocolate chips until evenly distributed.
  6. Drop dollops of the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until lightly golden. Enjoy the aroma!

Notes

For best results, use full-fat ricotta and refrigerate dough if too sticky. Can be stored in an airtight container for up to a week.
