Cajun Chicken Mac and Cheese

A creamy and cheesy mac and cheese dish with a spicy Cajun twist, featuring tender chicken and rich flavors.

  • 8 ounces elbow macaroni
  • 2 cups cooked chicken, shredded
  • 2 tablespoons Cajun seasoning
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, drain and set aside.
  2. In a skillet, melt 1 tablespoon of butter over medium heat, add shredded chicken, sprinkle with Cajun seasoning, and heat for about 5 minutes. Remove from skillet.
  3. In the same skillet, melt remaining butter, whisk in flour for 1 minute, then gradually add milk while whisking until thickened, about 5 minutes.
  4. Reduce heat and stir in cheddar cheese until melted and creamy.
  5. Add pasta and chicken to the cheese sauce, mixing well, and season with salt and pepper.
  6. Serve hot, or transfer to a baking dish and sprinkle with additional cheese, then bake until bubbly.

Notes

Adjust the Cajun seasoning based on spice preference. Stir in additional vegetables for a healthier variant.
