Buttery Brown Sugar Cinnamon Cookies

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (220g) brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add to the wet mixture and stir until just combined.
  5. Scoop out dough balls onto a parchment-lined baking sheet, leaving about 2 inches between each cookie.
  6. Bake for 10-12 minutes or until edges are golden brown.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
