Butter Pecan Cookies

Delicious and easy-to-make cookies featuring a buttery flavor with crunchy toasted pecans, perfect for any gathering.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped and toasted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Toast the pecans for about 5-7 minutes until lightly browned and fragrant.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).
  4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  5. Whisk together the flour, baking soda, and salt. Gradually add to the wet mixture until just combined.
  6. Fold in the toasted pecans.
  7. Drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until the edges are golden brown, then cool on the baking sheets for 5 minutes before transferring to wire racks.

Notes

For a softer cookie, take them out of the oven when the edges start to turn golden.
