Butter Pecan Cookies

Delightful butter pecan cookies that transform any occasion with their toasty flavor and chewy texture.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, incorporating the vanilla extract with the second egg.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Gently fold in the chopped pecans with a spatula.
  6. Scoop rounded balls of dough onto a lined baking sheet, leaving space between them.
  7. Bake for 10-12 minutes until the edges are golden but the center remains soft.
  8. Let cool on the baking sheet for a couple of minutes before transferring to a wire rack.

Notes

For a dairy-free version, substitute butter with coconut oil or plant-based butter. Chill the dough if your kitchen is warm to prevent excessive spreading.
