  • 1 lb. boneless, skinless chicken breasts
  • 1 can (15 oz.) kidney beans, rinsed and drained
  • 1 can (15 oz.) diced tomatoes
  • 1 bell pepper, diced
  • 1 medium onion, chopped
  • 1 cup buffalo sauce
  • 1 cup chicken broth

Instructions

  1. Prepare the Vegetables: Chop the onion and bell pepper into equal-sized pieces.
  2. Layer in the Slow Cooker: Add chicken breasts, kidney beans, diced tomatoes, onion, and bell pepper to the slow cooker.
  3. Pour in the Sauce: Cover with buffalo sauce and chicken broth, stirring gently.
  4. Set the Slow Cooker: Close the lid and cook on low for 4-6 hours or high for 2-3 hours.
  5. Shred the Chicken: Remove chicken, shred it, and return to the chili.
  6. Final Stir and Serve: Stir and simmer for an additional 10-15 minutes. Serve with garnishes.

Notes

Store leftovers in airtight containers for up to 4 days. This chili also freezes well for up to 3 months.
