Blueberry Cottage Cheese Breakfast Bake

A delightful and nutritious breakfast bake featuring creamy cottage cheese and sweet blueberries, perfect for any family gathering.

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 cup fresh blueberries
  • 1/4 cup sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the cottage cheese, eggs, milk, sugar, and vanilla extract until smooth.
  3. In another bowl, sift together the flour and baking powder.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fold in the fresh blueberries carefully.
  6. Grease a baking dish, pour the mixture into it, and spread evenly.
  7. Bake for 30–35 minutes or until the top is golden brown and a toothpick comes out clean.
  8. Allow to cool for 5 minutes before cutting and serving warm.

Notes

For a sweeter twist, serve with maple syrup or a dollop of yogurt. Can be made ahead of time and baked fresh in the morning.
