  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1 cup unsalted butter, softened to room temperature
  • 1 1/2 cups granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)
  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and cream of tartar.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy (about 2-3 minutes).
  4. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. In a small bowl, combine the 1/4 cup of sugar with the tablespoon of cinnamon.
  7. Scoop tablespoon-sized balls of dough, roll them in the cinnamon-sugar mixture, and place them on a greased baking sheet.
  8. Bake for 10-12 minutes, until the edges are set.
