The Best Jelly Thumbprint Cookies

Delightful cookies filled with fruity jelly, combining a buttery texture with a sweet-tart filling.

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup of your favorite jelly or jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg yolk and vanilla extract, mixing well.
  4. Gradually add in the flour and salt, mixing until just combined.
  5. Form small balls about one inch in diameter and place them on a lined baking sheet.
  6. Press your thumb into the center of each ball to create a well.
  7. Fill each well with jelly, being careful not to overfill.
  8. Bake for 12-15 minutes, or until edges are lightly golden.

Notes

For variations, try different jellies or roll the cookie balls in nuts before baking.
