Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine peanut butter, sugar, egg, vanilla, and baking soda; mix well until smooth.
  3. Scoop about 1 tablespoon of dough, roll into a ball, and place on a baking sheet lined with parchment paper 2 inches apart.
  4. Press down with a fork to create crisscross patterns.
  5. Bake for 8-10 minutes or until the edges are golden brown.
  6. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
