Baked Feta Eggs with Tomatoes and Spinach

A delicious and uncomplicated dish that combines baked feta, juicy tomatoes, and wilted spinach, perfect for any meal.

  • 1 block feta cheese
  • 2 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)
  • 2 cups cherry tomatoes
  • 4 large eggs
  • 2 tablespoons olive oil
  • 2 cloves garlic (optional)
  • Fresh herbs (such as basil or parsley, optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Coat the bottom of a baking dish with olive oil.
  3. Layer the tomatoes and spinach in the dish, seasoning with salt and pepper.
  4. Place the feta cheese in the center, drizzling with olive oil and adding herbs if desired.
  5. Crack the eggs over the mixture.
  6. Bake for 20-25 minutes until egg whites are set and yolks are slightly runny.
  7. Let cool slightly before serving, garnishing with herbs or chili flakes if desired.
