Baked Cottage Cheese Eggs

A nutritious and flavorful breakfast dish combining creamy cottage cheese and fluffy eggs, baked to perfection.

  • 4 large eggs
  • 1 cup cottage cheese
  • 1 cup diced vegetables (e.g., bell peppers, spinach, tomatoes)
  • 1 cup shredded cheese (such as cheddar)
  • Salt and pepper to taste
  • Fresh herbs (optional, such as chives or parsley)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs until fully blended and slightly frothy.
  3. Add in the cottage cheese and mix well.
  4. Stir in the diced vegetables and shredded cheese until evenly distributed.
  5. Season generously with salt and pepper and add fresh herbs if using.
  6. Pour the mixture into a greased baking dish and spread evenly.
  7. Bake in the preheated oven for about 25–30 minutes, or until edges are golden and a toothpick inserted in the center comes out clean.
  8. Allow to cool for a few minutes before slicing and serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days.
